I just completed the Basics 1 course, and it has been a wonderful experience. I've been so impressed by my educational experience over the past three weeks. The instructors explain concepts in such a warm, engaging way, and they really take the time to invest in each student. I felt like I was part of a community, not just a class, and I learned so much. My husband and I have been cooking together for five years, and after the first week he remarked on the difference in the way I carried myself in the kitchen and how I look at ingredients more strategically. I'm hardly a total novice, but if that's the response my husband noticed after only two nights in the Northwest kitchen, you can bet I'm coming back for more! Thanks again for everything, Northwest team. My time in your kitchen was the most fun I've had in ages!

My husband and I just completed the Culinary Basics course and it was AMAZING. The classes were so informative from the tips to the science behind cooking. They taught us how to cook food in ways I would have never thought. This is definitely not your ordinary cooking class. There were ladies in he class who have been cooking for 40 years and were amazed at all the tips and lessons they took away from the classes. The Chef Instructors are personable, knowledgable, inclusive and they all have a great sense of humor. Their passion for food is undeniable. No question was ever a dumb question. There was a huge variety of food through the course and we never left a class hungry so dont eat supper before you go but expect to eat your main dish around 7.30pmish. The cooking stations are huge, with only 4 people (2 groups of 2) sharing a large 6 burner gas stove. You are in pairs when preparing food with each person having their own chopping space. The Chefs and staff do an excellent job in having some of the prep done for you but still leave enough for you to learn great skills. I highly recommend purchasing the knife which is in the kit as the knife was life changing for me in the kitchen. You can also buy special EVOO which I totally recommend getting. Even with my food sensitivities I enjoyed this class immensely. From beginner to advanced, this is a course everyone should take once in their life! All the pictures are dishes we made in the class!

I signed up for the basics level 1 in February because I really needed help starting to cook, I had literally no experience and didn't know how to start. I enjoyed the first 2 days so much that I immediately signed up for level 2 and level 3. I also signed up for the pastry and bread courses. To top it off I even took time off work and did a full time boot camp too. I did 6 enthusiast courses in total in 5 months. Coming to the school was life changing and gave me a confidence in cooking I never thought I would have. Who would have thought I could design and execute a 7 course meal, or make my own stuffed pasta from scratch. I learned a lot, made new friends and took away life skills that will last forever. I highly recommend this school if anyone wants to get more in to cooking.

I took the pastry program at NWCAV, and it was amazing. A fast-paced but in-depth program that lasts the right amount of time, had so much of the 'why' involved, and valuable assignments that allowed students to break away from set recipes and concepts. Within the first few hours of being at the school and knowing zero people prior, I felt very welcome and part of an efficient pit crew. I had other pastry and chocolate experience prior to attending NWCAV, and it was always... very lacking. NWCAV filled in the gaps for me with great instruction, trending concepts, and excellent feedback delivery. The chefs are masters at delivering opportunistic feedback. I would highly recommend this school to absolutely anyone with an interest in cooking or pastry. Do it!

Took the enthusiasts class at Northwest Culinary Academy of Vancouver over four days with my wife and it was the best learning experience we have had in a while. Chef Jonathan, Chef Tony, Chef Eric and assistant chefs Jason, Chanel, Monica were an awesome team delivering quality cooking insights, theory, knife and culinary skills. Big thank you to all of them. Each person had a gas burner stove, prep/cutting board area and a sink. Covid temperature checking, masks all the time, and proper sanitization was done. Kitchen was also spick and span after each act. We learned a ton that we will bring to our daily cooking lives and enjoyed ourselves tremendously.

Took the fundamentals 101 in-person class here, had a great time. Atmosphere was very relaxed and inviting. Chef and staff were very helpful and provided a comfortable space for all the students to work in. Great kitchen to work in and quality products. I have been cooking at home for some time but I think any level can benefit from this course. Look forward to taking more courses in the future.

I took the Basics I: Flagship Fundamentals Course just recently to improve on my home cooking skills and to learn its discipline. I've been cooking by following recipes but this course has certainly opened up my eyes with a fresh look, i.e., by putting on a new "Reading Lens". I've also learned the art of flow in the kitchen with Mise en Place. Each Chef instructor brought to the classes their insights, techniques, personal experiences, and how to "Think like a Chef." There were times during the classes I have those light-bulb moments at either during the class or at the kitchen station. Yesterday was my birthday, and I wanted to share what I've learned. I couldn't believe that I was able to cook 10 dishes - first time ever - out from the four day class lessons for a family meal. And the verdict from family - "...every dish was delicious... and that it was a melody of food." I was inspired and I can't wait to begin with the Culinary Basics II: Next level of courage + creativity. Thank you Chefs, and thank you NWCA...
