When you arrive in front of this restaurant, you'd not even realize it is actually a restaurant. The place is actually very small and music it's loud. Said like this maybe the first impression is bad that's true. When we were presented the menu, it was directly to the whole restaurant that it was presented, dish by dish, one by one. That was new for me. It was a small menu, 4 starters, 4 main dish and 2 desserts As an entree, we took the ceviche and the shrimps. The ceviche of scallops had a very nice taste, the seasoning and the dressing was right to our taste. A mix of sweet and sour with the freshness of the ceviche. The shrimp on the other hand didn't have that crispness of fresh shrimps, it was more a fondant texture. The dressing was nicely prepared with a touch of bitterness in the salad. We waited a long time for the main dish to arrive as they serve all the tables at the same time like if we were a huge group. For the main course, we had bison and duck. Both meat were really good, the bison maybe a tiny little bit more cooked to our taste but it was delicious. The same vegetables were on both plates. As a side dish, the bison had porcini mushroom and truffle purée that was very tasty and a dark sauce that goes very well with the meat. For the duck, it was served with pro, which unfortunately did wasn't to my taste. I would have seen this orzo more like taboulé, as a cold dish with a touch of mint. It was too cooked and fondant for me. As for the sauce it was a creamy moutarde which tasted good. The moutarde sauce would have tested better with white meat! At the end of the meal, we had the brownie with pecan nuts and a white chocolate sauce. The brownie felt like a cake in mouth, moist, not too much chocolate, not too sweet, not too fat like one bite makes you full. The staff there was nice and friendly. I'd gladly try it again when they will have their next menu

Such a special place in Quebec City. Anthony Bourdain was always right. This place is what he said it was. Rez au veau is spectacle and the canard is where it’s at. We will never forget those flavours. Not to mention the hot men working - good food by good men. Thank you! Amen to the food gods ?? !!!

This was such a great experience, I highly recommend anyone to try this place! You do need to call them during their operating hours for a reservation (I wish they made an online version since their operating hours are quite limited). The service was spectacular, the food and dessert was amazing. I remember seeing this place on Anthony Bourdain’s show and we knew we needed to try it out. It did not disappoint, loved it!!!

"Some dude's kitchen" restaurant (because it's literally in a house) with elevated french dishes. Rotating menu. Same owner as Albacore, another excellent restaurant I didn't get to try. Ris de veau (calf thymus). A.k.a riveau a.k.a sweetbread a.k.a calf's brain (misnomer, it's white and maybe tastes like brain? Never tried). Apparently it has to be calf b/c adult lose this organ. Sauce=organ juice (translation unclear), cream, some hard liquor (translation unclear). Mushy, chalky, creamy, dank like kidney, liver. Low in fat. Surface nicely crisped. Otherwise neutral flavor. Sauce is very very nice, riveau is interesting but not something tasty enough to seek out. Excellent drinking dish I suppose. Entrecote (rib/ribeye) bison steak. Extremely lean, "chewy tender" (chewy in a good way). Theoretically medium rare but actually closer to rare (which is great imo). Otherwise similar to beef. Don't notice a gamey flavor. Very clean tasting steak. Doesn't feel fatty or overwhelming. Nth bite as good as first. Black & white brownie with irish whip cream. Hot and not too dense on the inside. Very bitter, not too sweet. Hint of alcohol provides nice counterbalance on sweet flavors. Was skeptical at first since brownies are too indulgent but nicely balanced. Very satisfying.

Incredible experience, it really feels like these guys are cooking just for you. They only do 2 dinner services per night so make sure to reserve in advance. Small menu, 4 appetizers and 4 mains, but everything they make is so good and high quality. Pescetarian friendly but not a great choice for vegetarians or vegans. We had sweetbreads in truffle cream sauce (I was skeptical but of course it was absolutely delicious), haddock and Israeli couscous, and the waygu beef. Bill was about $150 for two people with a drink each and no desert. Would absolutely go again - if you have a chance and love good food this place is a must visit!

Incredible place. Was not expecting such excellent quality of food here. Incredible value, great customer service. One of the tastiest dinners I've had in a long time. Bison tartare as an appetizer followed by pork with sweet potato purée and broccolini. I will be back. Extremely impressed.

Pretty good spot. Interesting dishes sprinkled into standard fare (blood cakes with scallops, crab with gazpacho). Nothing mind blowing like we got other high tier french spots we've visited. Sweet bread was a solidly good dish; duck was a bit dry. Presentation is great. Hip and cool vibes.
