Growing up in England, where the kitchen was ruled by my Filipino mum, the humble Bay Leaf made an appearance in the dishes that would be our dinner, and the food cooked by my aunties for spontaneous parties.
Yet a question I’ve heard many times; from the shared kitchen at university, to potlucks: Do bay leaves make a difference?
Standard culinary bay leaves hail from the Mediterranean and possess the subtle flavour we’re used to (believe me, it’s there!). The other common variety, California bay leaves, are stronger in flavour and often sold fresh as opposed to the dried variety. With California bay leaves the flavour can be very intense, and you run the risk of making your dish taste like cold medicine. However, a friend of mine who loves pickling vegetables, loves to use California bay leaves for a floral hint.
To understand how bay leaves add to a dish, one could try boiling a leaf in a pot of water. Bay leaves contain an essential oil which is released gradually, through a slow simmer, releasing notes of tea-like aromas. This helps round out the flavour in soups, stews, and sauces.
The bay leaf as a person is a supporter, an enhancer, whispering words of support from the sidelines. Like a great friend, they add that dash of flavour you never knew you were missing.
Once you purchase your bay leaves, you can either store them in a cool dry place, or store them in the freezer for up to a year.

The person I talked to wasn't very enthusiastic, he gave me what I asked for, but wasn't overly helpful with my decision making. I'll be back because the oil I got was reasonably priced, and it's a unique store.

We sort of explained what our daughter was interested in, and two young ladies enthusiastically went right to work and put together an absolutely beautiful gift set for us! Thank you Desiree and Kathrine for all your help! It made our day!

I ordered some amber bottles online and all of my questions were answered promptly via email. This nice lady even tested the capacity of the bottles for me because of my specific requirements. She could have said "I don't know" and I'd be fine with that. Thank you Sage :). Next day I received phone call to be notified about out of stock products, their arrival time, and was offered store credit or refund. My order arrived fast to BC and I must say they are serious about their packaging. So bottom line is, visit them, call them and support them. I'm glad I did. Thank you guys!

Tbh, I had no idea how bad quick buys affected my skin, hair, and body in general. Not to mention, not nearly as much garbage or recycling from their products (they refill cleaned containers). This easily one of my new favourite stores.

Love the teas, and quality of the herbs and spices is top notch. Online order was shipped quickly and securely. Will absolutely be ordering more!

I emailed about an item with a missing piece in my order, and was called on the next business day to let me know a replacement was on the way, no problem!
Really love the Cocoon Apothecary skincare products they have - the Ancient Mud Facial Mask is my favourite!
