CHEF PROFILE - DEREK WILkins

DEREK STARTED HIS CAREER AT ROUGE RESTAURANT WORKING UNDER CHEF MIKE DEKKER.
IN HIS THREE-YEAR TERM, HE WORKED HIS WAY UP FROM PREP COOK TO SOUS CHEF. SINCE THEN, HE HAS WORKED IN MULTIPLE VENUES AND UNTIL RECENTLY, WAS THE CHEF DE CUISINE AT WORKSHOP.

HE HAS BEEN FORTUNATE TO WORK ALONGSIDE AND LEARN FROM SOME OF THE TOP CHEFS IN CALGARY. HE IS BRINGING HIS EXPERIENCE IN FINE DINING, HIS COMMITMENT TO SUSTAINABILITY, AND HIS USE OF HIGH QUALITY INGREDIENTS TO CREATE A UNIQUE MENU FOR THE CITY’S CULINARY SCENE.

J	Jenna N on Google ★ ★ ★ ★ ★ The service was amazing. Our server/bartender was so nice and accommodating, I wish I got his name but he was very tall with a beard. The food was delicious (highly recommend the Brussels sprouts). Excited to go back again!

Only had drinks ("Let's get tropical" and the "Smoke & Sour") but they were well made! Nothing worse than ordering a whiskey sour for $15+ and it's bad, BUT the drinks here were delicious! Also the host Brandon with the black air forces had amazing hospitality! 5 stars to him??

Then flank steak and brisket for mains. Chocolate cake for dessert. Couldn't have been better. Would highly recommend to anyone and will definitely comeback.

The cocktails are fantastic and will have you ordering more - especially during the all day happy hour on Wednesday. The food is also delectable, and I'd highly recommend the Fried Brussels!

I appreciate, as a gender diverse person, the gender-inclusive bathrooms and signage. that is a small detail that makes people like me feel included, and it's a reason I'll be back again.

Notably Kyle is an absolute gem! We loved every conversation and enjoyed his presence. If you are looking for some of the best food and cocktails this is the place! Its also fantastic for any Stephen King fan, more specifically a fan of The Shinning. 10/10.
