Technique like I have never seen- no browning of the egg, delicate and soft, moist (not ‘wet’!) in the middle; brings out the natural flavour of the ham and mushrooms. Hash browns were perfect as well. It’s authentic home cooking with love people!!! Incredible mystique to find such an artful expression of an omelette in a place like this.
